> On the 11th of October in Roman times the vinalia were celebrated, tasting the first product of grape pressing: the must (il mosto).
After fermentation, merum, that is pure wine, was usually sophisticated with ingredients to say the least surprising: honey, sea water, minced oysters, chalk, flower petals, or pitch.

Dopo la fermentazione, il merum, cioè il vino puro, veniva solitamente sofisticato con ingredienti a dir poco sorprendenti: miele, acqua di mare, ostriche tritate, gesso, petali di fiori, o pece.
